Where they are identical

Both store the key in the same certified secure element. Both run the same published firmware. Both support standard seed backup and Multi-share Backup. Both connect only by USB-C, with no radio and no battery in either. Both show transaction details on the device screen and wipe after repeated wrong PIN entries. If your only concern is how well your funds are protected, there is nothing to choose between them.

The only real difference: the screen

On the Safe 3 you confirm addresses and enter your PIN and passphrase using two physical buttons and a small monochrome display. It works, but entering a long passphrase is slow, and reading a full receiving address on the small screen takes care.

The Safe 5 colour touchscreen makes all of that quicker and easier to read. If you verify addresses often, move funds regularly, or use a long passphrase every session, the touchscreen earns its cost. If you set the wallet up once and mostly leave it alone, you will barely notice the difference.

If you want wireless, neither is the answer

Both of these are wired devices. The only Trezor with Bluetooth is the Safe 7, at around 249 dollars, which also adds Qi2 wireless charging, a second auditable secure element and post quantum signature support.
